St. Regis Aspen Resort has partnered with Food & Wine magazine to debut Chefs Club, an innovative new restaurant concept that was introduced along with the Aspen Food & Wine Classic in June. Biannually, a rotating group of Food & Wine’s Best New Chefs will create an exclusive menu of seasonally inspired, American regional cuisine.

Cresto Ranch, a “glamping” tent resort part of Dunton Hot Springs, will open in Colorado’s San Juan Mountains this summer with eight luxury, canvas safari-style tents. The interior of the tents will include heated wood floors, hot stoves, stylish bathrooms and more. A restored farmhouse home will be Cresto Ranch’s gathering spot and feature a restaurant, bar, screening room and other common rooms. The resort will be open from May through October.

Elk Camp Restaurant, located at Snowmass, will replace Café Suzanne and be located adjacent to the top of the Elk Camp Gondola. The $15 million dollar, LEED-certified project includes a restaurant with seating for up to 300 guests and also has summer and evening event space.

Big Tire Bike Rides by Telluride’s BootDoctors makes biking in the winter a less slippery proposition. This adventure on Salsa Mukluk fat bikes can be tailored for groups, from a three-mile snow ride through the valley floor to an extreme mountainous ascent and descent or something in the middle. A break at Telluride Brewing Company is included in a half-day Big Tire Bike and Brew Tour.

Outlook Lodge, which opened in November, is a beautiful, six-room retreat located in the small mountain town of Green Mountain Falls near Colorado Springs. Cheyenne Mountain Zoo’s $13.5 million Encounter Africa exhibit will be unveiled this spring. Highlights include a new plaza featuring a traditional African tent, full-size elephant sculptures and an amphitheater for demonstrating elephant training, enrichment and husbandry.
